Gingerbread loaf

( a friends Aunty Jean made this loaf) it is a very old recipe. I’m sure my grandmother had one that was  similar. I enjoyed eating a slice with a nespresso coffee mid morning.

Melt together 115 gms butter

1 cup brown sugar

1 cup of golden syrup

Then add 2 teaspoons of baking soda.

Cool and then add 2 1/2 cups of flour and 2 dessert spoons of ground ginger.

bake in small loaf tins for about 20 mins.
