Lemon Meringue pie

Today felt like a Lemon Meringue pie day. It is a very cool 10 degrees, for a spring day. The

incentive also was Callum’s 30th birthday .  This recipe was the one my mother used, all the male

family members seem to just love Lemon Meringue pie!

1 1/2 cups of water

1 cup sugar

3  rounded tablespoons of cornflour

2 eggs

1 lemon juice and rind

a nob of butter

Heat the oven to 180 c  and cook pastry in a ovenproof dish.( nowadays I buy sheets of frozen puff pastry it makes it quick and easy)

In a saucepan mix cornflour and sugar then slowly add the water, bring to the boil and cook 3 mins. Take off the element.

Add nob of butter, yolks and lemon (rind and juice) I still manage to get a few pips staying in the pie!

Pour into cooked pastry case  cover with meringue made with stiffly heated eggs whites and 3 tablespoons of sugar.

Return to the oven to brown the top. Serve cold or just warm with cream.
