I found this recipe of my mothers in my old recipe book. It is so easy and it is nice to have a jar of them on your bench when someone pops in for a cup of tea to dunk of course!
1/2 cup butter
1/2 cup sugar
1/2 cup of golden syrup
1/12 -to 1 3/4 cup plain flour
1/2 teaspoon baking soda
1 dessert spoon of ginger
Heat butter, sugar and syrup in a pan. Pour over flour, soda and ginger and a pinch of salt.
This mixture should be moist but not sticky.
Roll into balls on oven trays (I always use baking paper these days) and prong. Bake 180 degrees until medium golden brown.
