Moist lemon Yoghurt Cake

I have never really been a cake maker, preferring to make muffins or biscuits. I love to cook the dinners when we have a family’s birthday and someone else would bring the favourite cake of the birthday person.  However, I’ve started making a few with success! Easy recipes and moist cakes are a sure winner. This week  we celebrate our  youngest son Callum’s birthday. His request was for a lemon Cake. This recipe I got from my friend Sue which ticks all the boxes.  I hope you will enjoy it too.

1 1/2 cups sugar

2 eggs

juice and rind of 2 lemons

1 cup of flavourless oil (eg grape seed)

1 small cup of plain unsweetened yoghurt

2 cups self raising flour and a pinch of salt

Preheat oven to 160 c

Blend sugar, eggs, lemon juice and zest, oil and yoghurt. Add flour and blitz to combine.

Put in greased cake tin. I use a ring tin I have more success rate with those! Bake 3/4 – 1 hour or springy to touch. Cool then ice. zest of lemon on top of icing.

Icing : Soften 20 gm butter and 100gm traditional cream cheese,  add juice and rind of lemon. mix then add about 2 cups of icing sugar. Serve with greek yoghurt or thickened cream.Yum!

p.s.another tip … exchange lemons for oranges for a change.

p.s. Decorating a cake is not my forte, Which ever way I tried to take the photo it didn’t quite look right. But I can assure you it will taste good. I leave the best cake decorator title to my sister Wendy!
