Recently I got an updated version of tasty Anzac biscuits from my mother and yes, they are nicer and crunchy to eat. So do try them. They are easy to make and great to have on hand with a nice cup of tea!
2 tablespoons of golden syrup
1½ teaspoons of baking soda dissolved in ¼ cup of boiling water
1 cup of flour
1 cup of castor sugar
1 cup of rolled oats
¾ cup of coconut
Gently melt the butter and golden syrup. Mix dry ingredients in a large bowl. Dissolve soda in boiling water and add to dry ingredients. Add butter and golden syrup, mix thoroughly. Place heaped teaspoons of mixture on baking paper over an oven tray. Bake at 180’ for 15-20 minutes. I fan bake at 170’.
Leave until hardened. Enjoy!
NB at first glance it looks the same as the original recipe, but….. it has 2 tbsp of golden syrup, and a slightly different order for mixing. They never fail.
