Yummy Date Loaf

I have a thing about loaves at the moment as they are a nice change from muffins and so nice to enjoy with a lovely cup of tea. This recipe of my mothers always tastes good and is a quick and easy.

1 cup sugar

50g butter (add a bit more)

1 cup of sultanas

1 cup of dates (I like to use 2 cups of dates instead)

1 heaped tbsp golden syrup

1 1/4 cups water

bring to the boil in a pot, simmer for 5 minutes, then cool for 10 minutes

1tsp ginger

1 tsp mixed spice

1/2 cup of walnuts

1/2 tsp vanilla extract

1/4 tsp salt

1 tsp baking soda

1 tsp baking powder

2 cups of flour

add dry ingredients into cooled mixture, mix slowly, and half mixture in 2 tinfoil tins lined with baking paper.

bake 170 c for an hour. I check just before then. Slice and serve with butter.
